Marinated Chicken and Potatoes
One-half of 3.5 oz. Achiote Del Mayab brick
1 whole chicken
3 medium potatoes (sliced)
1 medium onion (diced)
1 cup water
2 Tbsp. oil
3 Tbsp. lemon juice
Cut chicken into 6-8 pieces and place in large pot. Dissolve Achiote Del Mayab in a small bowl with mixture of lemon juice and water, then pour over chicken. Add potatoes, onions, and oil to pot; then cover with foil and lid. Cook over medium flame for 50-60 min. Stir 3-4 times while cooking. Serve with rice and Black Bean Soup. Serves 4-6 people.
