Yucatan Chicken Soup

one whole chicken
3 carrots in pieces or 2 cups baby carrots
1 red onion
2+ tspns oregano
1/2 brick Del Mayab achiote (3.5 oz brick)
2 cups noodles
sea salt to taste


Cut chicken in pieces, put back bone in soup pot filled halfway with boiling water and 2 tspns salt.

Rub pieces with Del Mayab achiote and bake for 30-40 minutes at 350 degrees F.

Throw carrots, chopped red onion, oregano, and 2 tbspns. achiote paste in soup pot, put noodles in and boil for 15 minutes then simmer till ready to eat.
