Chicken Fajitas

Ingredients:

  • 1 lb. of chicken breasts, cut in strips

  • 1 lemon (juiced)

  • 2 sour oranges or 1 cup of orange juice

  • half of a 3.5 oz Del Mayab Achiote brick

  • 1 red bell pepper (sliced)

  • 1 green bell pepper (sliced)

  • 1 white onion (sliced)

  • Salt and pepper (to taste)

  • Cooking Oil (corn, vegetable or your preference)

  • Guacamole, optional

  • Tortillas, optional

 

Feeds 4 people

Directions:

In a medium bowl, add the Del Mayab Achiote in the juice of the lemon and oranges. We recommend using a fork or whisk to break down the achiote brick until it is completely dissolved.  Add the chicken breast strips to the bowl and let marinate as long as you like. You can cook either right away or you can let the chicken marinate for up to 8 hours. 

In a frying pan add the oil, onions and bell peppers. Once the onions and peppers are soft and the onions are translucent remove them from the pan and set aside. Add the chicken strips to the pan and stir fry until completely cooked through. Add the cooked bell pepper and onion mix back in to the pan and stir until everything is heated. Add salt and pepper, to taste. 

Optional: Warm-up tortillas and add guacamole. We suggest making tacos with the tortillas, achiote chicken, onions, peppers.
