Shrimp with Delmayab Achiote

Ingredients:

  • 1/4 of a 3.5 oz Delmayab Achiote brick 

  • 3 to 4 lemons (juiced)

  • 1 lb of jumbo shrimp

  • Cooking oil (corn, vegetable, or your preference)

  • Salt & Pepper to taste

 

Feeds 4 people

Directions:

Place Delmayab achiote in a mixing bowl with the lemon juice and stir with a form or whisk until the achiote is completely dissolved. Add the shrimp to the mixing bowl with the achiote marinade and stir until all the shrimp is covered with achiote. You can either cook immediately or let marinate for up to an hour. Add the cooking oil to your grill pan and grill achiote shrimp 2 to 3 minutes on each side. 

Optional: serve with tortillas to make shrimp tacos and serve with rice and beans.
