Bistek con Papas (Bistek with Potatoes)
•2 lbs. boneless beef round steak(medium slices)•2 yellow chilies
•3 medium potatoes (sliced) •1/3 cup lemon juice•1 medium white onion (diced)
•1 cup water•1 small bell pepper (sliced)
•2 Tbsp. cooking oil•1 medium tomato (diced)
•1 tsp. salt•1/4 of a Bistek Del Mayab 3.0 oz. brick
INSTRUCTIONS: Dissolve bistek in lemon juice, water and salt in small bowl. Place medium sized slices of beef into a large pot and pour Bistek marinade over beef. Add potatoes, onion, bell pepper, yellow chilies, tomatoes, and oil. Cover pot tightly and cook on low heat for 45 minutes stirring occasionally. Serve with white rice, beans, warm tortillas or bolillo bread. Serves 4 to 6 people.
