Chicken Fajitas Recipe
Ingredients:
One lb. of chicken breasts, cut into strips
One lemon (juiced)
Two sour oranges or 1 cup of orange juice
Half of a 3.5 oz Del Mayab Achiote brick
One red bell pepper (sliced)
One green bell pepper (sliced)
One white onion (sliced)
Salt and pepper (to taste)
Cooking oil (corn, vegetable, or your preference)

Directions:
In a medium bowl, add the Del Mayab Achiote in the juice of the lemon and oranges. We recommend using a fork or whisk to dissolve the achiote brick until it’s completely broken down. Add the chicken breast strips to the bowl and let them marinate as long as you like—whether cooking immediately or marinating for up to 8 hours.
In a frying pan, add oil and sauté the onions and bell peppers. Once the onions are translucent and the peppers soft, remove them from the pan and set aside. Next, stir-fry the marinated chicken strips in the same pan until they’re fully cooked. Add the onion and bell pepper mixture back into the pan, stir until everything is heated through, and season with salt and pepper to taste.
